Scenes from Our Weekend

Hello all!

This past weekend, Rick and I headed to Chicago to celebrate our wedding with friends and family who weren't able to come out to California for our big day. I'm sure many of you heard about the shootings at LAX, and it was quite an adventure getting to the airport for our flight!

Yes, you are seeing things correctly--we walked in to the airport, along PCH. Not a car in sight! Although things were a bit crazy as many people waited to rebook their flights, we had no trouble getting through security in time for our flight.

The only time we were a bit nervous was when we came across this abandoned bag while picking up some snacks for the flight.....

Despite all of the craziness, we made it to Chicago safe and sound--and only about and hour and 20 minutes late. Saturday was the day of the party, but we still made time for a quick lunch at the Whole Foods in Chicago and visit to see Diane. On our way back, we decided a bit of an afternoon snack was in order. A new location of Roti has opened in Schaumburg, and it was their opening day! Rick and I had eaten at a Roti in downtown Chicago last year, and I was excited to see a new location closer to Mom's house.

I find it easiest to explain Roti like a Chipotle of Mediterranean food--you choose how you want your food (pita pocket/wrap, on rice, or in a salad), add your protein, add sides, and add toppings. You walk across a bar, just like at a Chipotle, too. Rick and I both opted for falafel pitas, and Mom got a side of falafel with a dipping sauce.

My pita was stuffed with falafel, tahini, hummus, tomato/cucumber salad, and red cabbage slaw. Delicious!

After our snack, it was time to get ready for our party. Mom found a great space at Emmett's Brewing Company in Palatine. We set us the tables with decor in our colors, and some flower arrangements. It was so much fun to see so many friends and family members! Rick and I had blast enjoying the house brewed beer and talking with everyone. The food at the party was veg friendly, too! (Not pictured--the delicious soft pretzels and bruschetta)

Sidebar: For anyone who hasn't been to Durty Nellie's in Palatine, they have the most incredible pumpkin beer on tap right now--Pumking from Southern Tier. Please stop what you are doing and go have one right now. Holy wow. Thanks to Jeremy for introducing us to the amazingness!

We hopped on a flight back to LA at 1, and ended up home with grocery shopping done and the pup picked up by 5:30. Dinner was a quick batch of stir fry (summer squash, zucchini, red pepper, onion, purple potato, snap peas, and bok choy with ginger and garlic) topped with Trader Joe's Red Curry Simmer Sauce. We garnished with peanuts and cilantro and had plenty of leftovers!

saute veggies in coconut oil

add snap peas

add bok choy

add simmer sauce

garnish and enjoy!

It was a whirlwind weekend, but we were so happy to spend it with our wonderful friends and family. Thank you so much for coming to celebrate us--we felt so loved by your presence and generosity!

Hope you are having a great week!
