(posted by Emily) It's been an interesting culinary weekend in the Barclay house! Some things went well, others did not go as well. Let's start with the flop of the weekend: One Pan Pasta via Looks easy enough, right? I found this recipe on Facebook or Pinterest (can't remember where at this point) and decided it would be a simple dinner for Saturday night. We are conserving the eating out budget, in advance of our trip, and we picked a bunch of great looking tomatoes I thought would work great in this recipe. Things looked promising at the start: And then they slowly started to go downhill... I had bought gluten free linguine for the pasta, and somehow, the lack of gluten protein made everything start to stick together.  At this point, it was more like a pasta casserole or pie. Graduation Weekend: Jeni's Splendid Ice Creams

(posted by Emily)  As any good Kappa knows, if there is a Jeni's within a 75 mile radius of your travel destination, you must go. My first trip to Jeni's was in 2010, when I went to Kappa HQ for my Leadership Consultant interview. After years of hearing my mom talk about the incredible ice creams Jeni makes, I was an instant fan. Once upon a time, I may or may not have walked 4 miles round trip from the Ohio State Kappa house to get myself some Jeni's.....It has been a long time since I've had a chance to eat at Jeni's, and Rick and I are lucky that she makes delicious and creative sorbets as well as dairy ice creams.  On the top of our ATL priority list was a stop a t Jeni's Westside Provisions . We headed over on Saturday, after a warm afternoon at the Botanical Garden --ice cream definitely hit the spot.  It was fun to see the line out the door--I'm glad Jeni is having so much success with her new stores! The only down fall...

Top Ten: Foods I miss now that I'm vegan

(posted by Emily) Yeah, I'll say it. There are non-vegan foods that I really miss sometimes. Don't get me wrong, I love my vegan life and wouldn't trade the way I eat now. But sometimes, I just really want a bagel.  Top Ten: Foods I miss now that I'm vegan 1) Cream cheese. This Philadelphia cream cheese commercial gets me every time. via 2) Toasted bagels with cream cheese via 3) Scallops via 4) Shrimp cocktail. It makes me (only a little) sad to know I'll never try this .  via 5) Jeni's non-sorbet flavors via 6) Chocolate with caramel via 7) Red Velvet everything (good thing Sprinkles has a vegan RV cupcake!) my midwestern friends know what this is ( via ) 8) Goat cheese via 9) The Playboy Roll via 10) That blueberry goat cheese log from Trader Joe's, with their gorgonzola crackers via via Now I'm hungry.  --E&R
