Falafel Bowls

(posted by Emily)  At our house, Saturdays and Sundays consist of meal planning and cooking ahead. I usually plan fairly simple things to cook for dinner during the week, that will yield leftovers for lunches. Sometimes, even the best laid plans get set aside because we decide to go out to eat or I'm too tired (read: lazy) to stick with my original recipe. Wednesday was one of those days (gluten free pasta and jarred sauce) and I avoided a new recipe I had been planning to try this week. Luckily, Thursday brought about a wave of productivity, and I decide to try my hand at these Baked Confetti Quinoa Falafel from Plantaful . A Slow Cooker Favorite

As many of you know, Peas and Thank You was one of the food blogs that served as an inspiration to me in my early vegetarian and vegan days. Mama Pea was/is raising a veggie family, and her posts were always filled with great ideas and great food. Sadly, shortly after finishing her second cookbook, Mama Pea decided to call it quits. I miss her posts a lot, but we are still enjoying her food! I put together this crock pot soup on Sunday--it's the first time in at least 8 months that we've had it, and I definitely think it will be back on our table very soon! An Easy Dinner

From a favorite blog Allison and I When I first started getting into veg cooking, my friend Allison suggested I check out a blog called " Peas and Thank You ." Within the posts, I found fantastic recipes, family values, and confirmation that our lifestyle is one that works--even with kids. If you haven't read any of Mama Pea's posts, or checked out her cookbook , get off your computer and do it now :)  Last night's dinner came to us courtesy of the Peas. Many of the recipes I make with frequency are Mama Pea's, and when I had a craving for spaghetti last night, I knew where to turn .  I'll let the photos do the talking, but our add-ins were eggplant, zucchini, onion, red pepper, tempeh, basil, a little red wine, and garlic.
